Also, many of our clients use the IP address for mail server settings, and FTP host settings. Presumably this will change, so we would need the opportunity to warn them in advance of this.

This migration would be completely manual process so you will need to communicate with our Windows Team and get your data migrated on Plesk server. They will move your data and databases on the new server and you will be requested to verify everything with a temporary URL. Once your confirmation is received then they will proceed with DNS changes. They will point A records to the new Server from old server as this way you wont see any downtime for your website hostings.
