The difference between the hosting is simply which operating system they run on. It's like running a Windows computer and a Mac. You can do the same things on them e.g. Word Processing but the computers work in slightly different ways.

Personally I would choose linux hosting unless I had some specific need for Windows e.g. MSsql. And with eUKhost, both come with a graphical interface making them both pretty easy to use. Personally I like Linux as it seems more stable and less prone to issues but they both have their strong points.
