Hello Andy,

You have pointed A record and www CNAME record of your domain name to your VPS. You won't be able to create subdomains on your VPS as they won't resolve unless you add their A records from 123-reg control panel. Priivate nameservers need their separate entry.

Once you register private nameservers, you will need to point your domain name to those nameservers from "change nameservers" section and after that all your subdomains added on the VPS will immediately resolve from the VPS and you won't need to login in the 123-reg control panel again.
