If you need to forward all emails for me@abc.org to me@xyz.com, you need to set a forwarder for this email account. You can set the forwarder from your Cpanel.(Assuming you are on linux hosting plan).
If you change the MX record for domain, then all mail for that domain would route through new mail server and it wont forward the emails until any forwarder is setup on that account.
