Naturally there has to be an account for fred@xyz, but isn't that what changing the MX record is for? So that all mail gets sent to a different mail server with a different domain part.

Mail exchanger(MX) record is a type of resource record in the Domain Name System (DNS) specifying how Internet e-mail should be routed. MX records point to the servers that should receive e-mail, and their priority relative to each other.

What you are looking for can be achieved via Domain Forwarder.
In addition to forwarding individual mail accounts, you can forward all email from one domain to another using this domain forwarder option. You can add it via your Cpanel --> Emails --> Forwarders Section.
