Not a problem I'm happy to pay for both for the short switchover period (if I end up cancelling the current VPS Hosting near the beginning of a billing cycle will I need to pay for the complete month?)

It looks like the best way to go will be to order a new server rather than do it as an upgrade - this being the case is it OK to specify 'no domain' when I order?

You can go ahead and order using the option "No Domain". We send out invoices 15 days before the renewal. So if you request your VPS Hosting to be cancelled one week before the due date, that would be good enough.
