There are 2 options to make this possible.
1. Point A records of their domain to our Servers IP and their
website hosting will start resolving from our server. You can leave the MX records as they are as their mails are working from their ms exchange server right now.
2. Point nameservers of their domain to our server and then modify their MX records to make those point to their ms exchange server.
Both options will work as per your requirement and you can choose one which makes you feel more comfortable.
