Hi Alan,

I have answered all your questions step by step as following :-

I understand the actual transfer is very smooth, but is the environment going to be the same, so that if I can operate the L-VPS Hosting-01 I'll be at home with semi-/fully-dedicated servers?
Ans :- There's absolutely no difference in management of VPS Hosting, Semi-dedicated or Dedicated Server. You won't need any special skills to manage semi-dedicated or Dedicated if you manage to understand your VPS Hosting. We take care of migration and restoration of your website hostings when you upgrade your plan, so you won't need to bother about anything besides checking if everything got restored on new server as you want it to be.

I'm comfortable with using a CLI for local development work, but don't know what would be involved when dealing with things like mail servers, monitoring resources, DNS, etc. A steep learning curve does not bother me, I just need to know if it is practical. My main motivation is to keep as much of the server software as open source as possible.
Ans :- You should consider cPanel as it will save your time. You are into development so loosing your time in system administration won't help

Will I be responsible for software updates of the OS, PHP, MySQL etc; also would I be responsible for configuring the software to make sure it is secure?
Ans :- We will take care of initial security settings for your VPS Hosting. OS updates, PHP and MySQL updates will be performed from our side. We will configure all softwares to make sure they are safe. All you need to ensure is that you don't use outdated code in your PHP scripts as bad code invited hackers / crackers and we won't be responsible if they find loop holes in your PHP code.
