As far as our backup servers being outside of the E.U is concerned, we do that to achieve total redundancy. The back up servers which are in the USA would be on completely different networks. This gives us safety cover against a total network breakdown or any other unforeseen circumstance which can be avoided.

With regards to access level, each and every user is unique on the server and only the database user has access to his/her database. No other user will have access to your database.
