I would suggest that you contact the Windows hosting support team at 'windows [at] eukhost.com'. What may have happened is that Plesk hasn't removed all instances of your domain from the server when you deleted it, meaning that setting it up again may have mucked things. If you contact the support team then they should be able to sort your issue out ASAP.
In terms of Plesk not functioning properly, you can always consider Linux web hosting which will provide you with access to the cPanel control panel if you want to use something less complicated. However, Linux web hosting doesn't contain a majority of the features that Windows web hosting has.
