Reason I'm asking is that I have various domains, websites and email accounts set up for many clients who have business critical websites and email accounts. I would hate to think that if I enabled Spam Assassin in order to cover one small email account that it would have any impact on all the others as far as them receiving email goes.

You can enable SpamAssassin [
SA] for a single domain from the cPanel control panel. Enabling SA [either for a particular] won't be of any harm, unless you select the emails to be deleted when found to be as spam. If you enable SA for a specific domain, it won't be affecting any other domains you host, plus there are white-listing options available too, where you can add numerous domains to the trusted list which are to not be treated as spam.
