Default Understanding email setup - cpanel

I need some help understanding email setup on cpanel. I have multiple domains, and my email setup is a bit of a mess.

So, normal recommended setup is as follows?
  • Create mail account for domain, eg. chris@foo.com
  • Create mail forwarders for other addresses I might want eg webmaster@foo.com -> chris@foo.com
  • Set default address for that domain to eg ":fail: no such address here", so all other email and spam gets bounced. I assume one would get the text "no such address here" back in the failure email, but I just get "550-The recipient cannot be verified. Please check all recipients of this 550 message to verify they are valid."? I also assume that where a default address is set to ":fail: :fail: no such address here" the second ':fail:' forms part of the message?
  • Default addresses for add-on domains such as foo.bar.com should also be set to :fail:.
  • Default mail accounts should not be used, as they catch everything including loads of spam.

What might I use filters for?
