I used to own a VPS Hosting and the primary node uptime was 100% without fail. During scheduled maintenance, this falls to 99% - but you are usually well informed.

I suppose upgrades etc could be done at night?

Most of the updates are done online so you don't see any sort of downtime during those updates. 2007 was our first year into VPS Hosting so we had initial teething problems but everything looks perfect now. We've learnt from our mistakes and now we have a better system in place to avoid any sort of problems with the VPS Hosting nodes.
