Customizing osommerce

Hello again

I want to customize oscommerce have managed to alter design layouts. I would like to remove most of the countries and shorten the checkout ( I don't need everybody) to create an account. Rummaging around it seems (I have no knowledge of pcp) that it all comes down to tinkering with phpmyAdmin file which I can't find. I found somewhere that gave a download of (phpMyAdmin-2.10.1-) which contains a lot of folders, and it seems to me -but I am a complete novice at this- that maybe it or something like this is pre-installed on eukhost?

Go to the admin section (www.mydomain/mystore/admin) and then customise in there first before playing with the php files
