While buying VPS hosting, how much importance should be given to the control panel deployed by service providers on VPS platforms?

It completely depends on your requirement. If you have the expertise to operate the server via ssh or rdp then you do not need to buy a control panel, however if you are not sure about operating the server via ssh or rdp then a control panel can come handy for you as it easier to operate as compared to the command line.

Control panels like cPanel/WHM or Plesk are usually optional with majority of the service providers so you can opt for plain VPS without control panel if you don't need one. At eUKhost though, we bundle Plesk with all VPS plans as a standard feature at no additional cost but it can be excluded if not required.

Ohh okay!! Thanks for the update. But, generally what do people consider? What is your opinion on this. Generally, should I consider control panel even if i don't need?

In general, those who host multiple websites and are not very familiar with command line access prefer a user friendly control panel interface to manage their websites, email accounts, databases, website stats etc. So if you are new to web server environment, control panel should definitely be your selection with a VPS.

If you are sure you don't need one, skipping it will be a good idea as it will help save some gigs of storage space on your VPS.

Ohh is it?? I guess I will prefer more storage option as we all need more and more storage. As of now I guess I should choose the skipping option and later on if I need then maybe I can switch over.

Yep, that is definitely doable. Control panel can be installed later on to your VPS if required.
