If you are targeting a specific country then from an SEO point of view it'll be good to have the server in the same country. UK audience, UK server. German audience only, German server and domain TLD.
The second reason is site speed. The closer your server is to your viewers, the faster the site will load for them. More conversions, happier people, better SEO results.
